Yoshikazu Tanaka is widely regarded as one of the best knife makers from Japan. His dedication to the traditional craft of knife making is inspiring. Working out of the same shop his grandfather forged in, Tanaka-san with the help of his son Yoshihisa and their apprentice, turn our knives that chefs dream about!
Never comprimising on the technique, Tanaka-san explained to us he always uses the same charcoal to fire his forge, water to quench his blades and traditional hay for resting & annealing. The results are hard yet tough steel that is super easy to sharpen and a joy to use.
