Fujimoto Nashiji
“Nashiji” refers to the rough cladding on the outside of these knives. In Japanese the word “Nashiji” is used to describe the skin of a pear.

Fujimoto knives are hand-made in Sanjo city, near the heart of the Niigata prefecture. A city famous for steel fabrication that dates back to the Edo period. They make everything from knives to cooking vessels to gardening equipment.

The core of the knife is made from Aogami #2 (blue steel). This steel is sought after by knife makers for it’s ability to take and hold a very sharp edge, also it is a breeze to re-sharpen, another reason to love these knives!

All knives are fixed with a chestnut wood handle, which gives the knife a light feel and blade forward balance.
