Shirasagi Kurouchi Single Bevel
Hatsukokoro is a wholesaler based out of Amagasaki, Japan. They work with different blacksmiths, knife sharpeners and kitchen supply companies from across Japan. Their emphasis on collaborative knife projects makes them a very exciting company to work with. These single edged Kurouchi knives are a fantastic mid-range offering. The rustic blacksmith finish, coupled with the expert level sharpening and forging make this lineup something we are very proud to display at the shop.
Forged by Tomu Tamura using blue carbon steel (aka Aogami #2) means these knives take a very keen edge and cut beautifully. Blue carbon steel adds tungsten and chromium for rust resistance and is more wear resistant than white carbon steel. Blue carbon steel is a dream to sharpen, making these blades a very desirable for professional chefs.
All knives in this line (unless otherwise specified) are fitted with an octagonal wa-handle made from Teak. Teak is a durable hard wood that for centuries has been used in ship building and furniture for the wealthy.
