Yoshida Hamono

Located on the island of Kyushu in Saga Prefecture, Yoshida Hamono crafts everything from super affordable carbon steel knives for beginners to high-end blades crafted with high-tech PM steels. They have quite a large production area and can laminate all their steel in house.

This particular line of knives are the perfect blades for that cook or chef who is on the fence about owning a carbon steel knife, or for someone looking for a backup. They are ultra affordable with a rustic Kurouchi finish and simple magnolia handle.

The Blue#2 carbon steel core has been roll forged and clad in soft iron. They are then ground and sharpened by hand. Blue #2 steel is a high carbon high hardness steel that will take a beautiful patina when cared for properly and it takes a very keen edge when sharpened on water stones.

All knives in this range come fitted with a round magnolia handle and plastic collar. This gives the knife a very light feel and slight blade forward balance.

Knife stuff:
Steel: Blue#2
HRC: 62~63
Handle: Oval Magnolia w/Plastic collar
