Tojiro Flash
Tojiro flash are noticeably different from the DP line, with layered damascus steel, and handles made from Micarta. These knives are built for the cook who likes to feel a little heft in their knife.
The cutting core of the knives are made from VG10 steel. VG10 – Made up of Carbon: .95 – 1.05%, Vanadium: .10 – .30%, Chromium: 14.50 – 15.50%, Molybdenum: .90 – 1.20%, Cobalt: 1.30 – 1.50%, Manganese: .50%, Phosphorus: .03% This is one of the most popular stainless steels among Japanese knife makers. It has great edge retention and is very wear and corrosion resistant.
All of the knives in the Flash series have ergonomic handle made from Micarta, a very durable and quite attractive material. Overall these knives are superb quality, and built to last!
