Hatsukoro Ginyo
After spending years working under the guidance of his master, Hideo Kitaoka, Yoshihiro Yauji is starting to make waves in the knife making making community with his unique style and excellent fit and finish.
For the Ginyo lineup he has teamed up with our friends at Hatsukokoro, a wholesaler from Amagasaki whose goal is to share Japanese craftsmanship with the rest of the world. They work with only the best knife makers and blacksmiths from all around Japan to supply us with exquisite tools for the chef.
This line of knives is forged with one of our favourite stainless knife steels, Ginsan. Ginsan steel (also known as Silver3) has a high carbon content and excellent wear resistance, making this steel really easy to care for. It is quick to raise a burr and it gets razor sharp, two reasons why we love when a Ginsan knife comes into the shop for sharpening.
Yoshihiro-san has clad this knife in a super attractive damascus cladding. The robust convex grind will ensure this knife can withstand heavy workloads and the beautifully polished spine and choil are easy on the users hands.
All knives unless otherwise specified have been fitted with an octagonal walnut handle. We love the simplicity and ease of repair that this style of handle is known for.
