HADO Sumi
On our 2023 trip to Japan we had our sights set on another small maker from Sakai that has been making waves in the culinary knife world. HADO is a young company with a very interesting story.
HADO sources their knives from local Sakai Blacksmiths, Yoshikazu Tanaka (Tanaka Uchi-Hamono) & Shougo Yamatsuka (Yamatsuka Hamono). Tanaka-san focuses on the Carbon steel offerings, while Yamatsuka forges the stainless knives. The knives are then sharpened at the HADO atelier, where some real magic happens.
Maruyama-san and his small team of sharpeners transform the forged steel into chef knives that are considered by many to be some of the finest chef knives on the market. HADO knives have a distinct oversized wide-bevel, polished spine & chamfered choil. All of these details come together to create a unique experience, right down to their world class packaging.
This knife has a white#2 steel core with a soft iron cladding. We love white#2 for the scalpel like edges it can achieve and it is a dream to polish.
All knives in this line are fitted with an octagonal single piece black oak handle. We love the simplistic beauty and functionality of this type of handle.
