Yosimitu Kajiya
Founded in 1937, in Shimabara, Nagasaki Prefecture, Yosimitu is a small workshop that has focused on making light and sharp knives with the end user in mind for 3 generations.
Junichi Ide, the head blacksmith, runs the business with his mother and wife. Junichi Ide has been working as an artisan of Japanese knives for more than 20 years. As a 3rd generation blacksmith, he works hard to keep tradition alive by teaching the next generation of makers. His grandfather was trained at the shop with the same Yoshimitsu name but a different kanji 吉光. When the grandfather was ready to become independent the master allowed him to use the same sounding brand with a different letter.
All knives are laminated in house, using traditional technique handed down over the generations.
