Sunaarashi
This new line of knives from Hatsukokoro is named Sunaarashi which translates to Sandstorm. Hatsukokoro is a wholesaler based in Amagasaki, Japan. Their collaborative approach to business make them a very fun company to work with and the ever expanding range of knives has something for every skill level. From one of a kind honyaki masterpieces to everyday use knives for culinary students and home cooks.
The Sunaarashi line is made in Seki, Japan. Seki-city is a world famous knife making powerhouse hosting the Seki City cutlery festival and drawing knife aficionado's from around the world. These knives are ground super thin with a slight convex, easily landing them in the laser category.
Hatsukokoro Sunaarashi have a beautiful mirror polished black suminagashi cladding and VG10 cutting edge. VG10 was designed for kitchen cutlery but has now made its way to sporting knives (hunting and fishing) as well. It is a stainless steel with a high carbon content. The metallurgy breaks down as such, 1% Carbon, 15% Chromium, 1% Molybdenum, 0.2% Vanadium, 1.5% Cobalt, and 0.5% Manganese. VG10 is a very versatile steel and a great one for beginners and experienced users. It is quite durable, so you need not worry about chipping if you treat it properly. It is easy to sharpen, and has great edge retention.
All knives in this range, unless otherwise specified, are fitted with an octagonal wa-handle made from walnut. We love octagonal wa-handles for their simplistic beauty and the overall light feel they give to knives.
