Sakai Kikumori Kikuzuki UZU
Sakai Kikumori was established in 1926. They take pride in the fact their area of the country is world famous for knife making and work hard to uphold tradition.
Sakai Kikumori (also known as Kawamura Hamono) works with the best blacksmiths in Sakai. They forge everything from traditional single bevel knives for sushi preparation to double edged "western" knives and are also famous for their water quenched honyaki knives.
.
In April, 2011, Kawamura Hamono received the certification of “SAKAI WAZASHU” by the Sakai Chamber of Commerce. They were recognized by the Japanese government for their contributions to the local economy and also a nod to their reputation around the world.
.
This new "UZU" line is forged by master Yoshikazu Tanaka, one of the most talented and highly regarded blacksmiths in Japan. He uses a Yasugi blue carbon #1 cutting core to craft these beautiful cutting tools, which are all forge welded in house. Sakai Kikumori then sends the knives off to another local traditional craftsman who then grinds, sharpens and polishes the blade revealing the beautiful soft iron damascus cladding.
.
All knives in this line are fitted with a traditional Wa-handle made from magnolia wood which has been meticulously hand sanded to create a smooth feel and help protect against moisture penetrating the wood
.
