Hatsukokoro Yorokobi
We are super excited to add this new knife line from Hatsukokoro. Yorokobi means joyful, a reference to the feeling you’ll get when using these remarkable knives.
Hatsukokoro is a wholesaler based out of Amagasaki, Japan. They work with different blacksmiths, knife sharpeners, and kitchen supply companies from across Japan. Their emphasis on collaborative knife projects makes them a very exciting company to work with.
The Yorokobi line is hand forged by the same blacksmith who crafted the popular Komorebi & Yoake lines. These knives are super well balanced and have that handmade tool feeling we love.
At the core of the Yorokobi line is a semi-stainless steel known as SLD. SLD is a Hitachi steel that was designed for industrial cutting, so it's pretty tough and also easy to sharpen. There is around 11% chromium, so the knife is not quite stainless and will patine over time. So be sure to wipe and dry the knife after use.
The cladding steel is made from layers of stainless steel and copper. This gives every knife a unique look and makes it easy to care for.
We chose to fit an octagon-shaped stabilized birch handle into these knives. We love the shape and polished feel of these handles, they really elevate the whole experience.
