Haruyuki Mugi
Haruyuki AUS8 is an outstanding addition to the shop. This line of knives will definitely fit into the “gateway knife” section. These knives are a great choice for the chef who wants a nice thin Japanese blade, but with slight more durability than some of your harder steel knives. The tsuchime/kasumi finish is very pleasing to the eye, and aids the user with a nice food release.
Aus 8 is a stainless steel that does not require as much attention as some hard steels, which makes it a great knife for someone who is just learning how to sharpen their own knives. It is a breeze to sharpen, and has better edge retention then most western steel.
The handle is a 3 rivet, full tang handle made from Pakka-wood. Great for the cook who prefers a western style handle. The kanji on the blade reads Haruyuki.
