One thing people often do not realize is the importance of a flat whetstone for sharpening. If you do not stay on top of truing your stones, when it comes time to flatten them you will regret it. Regular maintenance is VERY important. Having a dished out stone sucks, and it will result in less than favourable sharpening results.
