Led by craftsman  Kunio Ishikawa, Kaji-bei knives are forged in a small workshop in Sanjo, Japan. Sanjo is city famous for its manufacturing of specialized tools, and kitchen knives
They focus on smaller sized kitchen knives that are both very functional and easy on the wallet. These knives are an excellent choice for the cook who has been considering getting a carbon steel knife, but doesn't want to invest a lot of money.
