Sharpening Classes Are Back!!

This winter we are excited to bring back our popular sharpening classes! We have moved into our new location at 155 Queen St. which has a larger sharpening area perfect for sharpening classes for 2 or demos for a group.

We will be offering two types of classes:

1. Basics of Knife Sharpening- This class is for total beginners or those with limited experience sharpening on whetstones. In this class we will be covering:

  • Knife steel: Knowing what steel your knife is made from is an important first step in knowing how to properly sharpen it. We will go over carbon vs. stainless, Japanese vs. Western, hard vs. soft steel.
  • Knife anatomy: You will learn the basic name and function of the parts of a knife. 
  • Stone selection/care: Choosing the proper stones is a crucial part of the sharpening process. You will also learn how to care for and properly store your stones to ensure they last and perform optimally.
  • Sharpening and honing technique: This is a hands-on class where Adam will demonstrate and assist you as you learn to properly sharpen and hone your knife. 

For this class you will need to bring:

-A chef knife that you can practice sharpening on. Gyuto (chef) & Santoku are the easiest to learn on, while flexible knives are difficult. Please do not bring in serrated knives to the class.

-A coarse and medium stone. If you do not own any whetstones we will have some for you to use. This will give you an opportunity to discover what you need at home. After the class, we will be offering a 10% discount on all sharpening supplies and knives. 

2. Advanced Knife Sharpening- This is a class for someone who already has some experience with knife sharpening on whetstones but wants to take their sharpening to the next level. In this class we will be covering:

  • In-depth knowledge of Japanese whetstones: As you get more involved in knife sharpening you realize that there is a wide variety of sharpening stones available. In this class you will learn more about natural vs. synthetic, what stones we love using and what stones will be best for the kind of sharpening you will be doing at home. 
  • How to do repairs: You will learn how to do repairs to knives that have minor chips and/or rusting or need to be thinned out to restore geometry and expose core steel.
  • Sharpening aids: We will go over additional products and tools that come in handy when sharpening knives regularly.
  • Sharpening/honing techniques: This is a hands-on class where you will be learning to sharpen your knife like a professional. 

For this class you will need to bring:

-A damaged or heavily used knife. 

-At least 3 whetstones: Coarse, medium and fine. Stones will be available for use, and after class there will be a 10% discount on all sharpening gear and knives!

Cost: $75+tax for 2 hours of instruction time. Come learn a cool new skill!
