Hatsokokoro HAP-40 knives combine high performance steel with affordability. Made in Seki, a city famous for knife making, these knives will blow your mind with insane edge retention.

They are constructed using the San-mai method, San-Mai simply meaning three layers sandwiched together. At the core of these knives lies HAP40 powder steel, one of the hardest knife making steels on the planet. It has a very high carbon content making it a very desirable steel for both knife makers and chefs. HAP40's breakdown looks roughly something like this: Carbon 1.3%, Chromium 4%, Molybdenium 4.6-5.4%, Vanadium 3%, and Cobalt 8%. It a very rich as you can see, resulting in a fine grained steel that can be sharpened to a very acute angle.

All the knives in this line are fitted with an octagonal wa-handle made from teak. Teak is a hardwood that for centuries was used in furniture for the wealthy.
